At the heart of this experience is a carefully crafted menu by Head Chef José Cacciavillani. Born in Argentina, Chef José’s love for cooking was kindled in his family’s kitchen, where the comforting warmth of fire and the aromas of homemade dishes sparked a lifelong passion.

This early inspiration carried him to the celebrated 1884 Restaurant in Mendoza, where he mastered the art of wood-fired cooking. Chef José’s affinity for flavourful cuisine led him to some of Europe’s finest kitchens, honing his skills under culinary icons such as Joan Rocca, Michel Bras, and Ferran Adrià in their three-Michelin-starred restaurants.

Now at Nuska Beach, Chef José returns to his fire-cooking heritage, celebrating the flavours and traditions of Levantine and Mediterranean cuisine. Signature dishes like Chargrilled Clams are prepared directly over oak, cedarwood, and applewood, infusing each bite with a distinct and smoky flavour. The result is a menu that feels both fresh and timeless, inviting diners to connect over food that is unpretentious yet deeply satisfying.



The essence of Chef José’s cooking can be enjoyed across the three new al fresco dining experiences at Nuska Beach, where every dish reflects a dedication to quality ingredients, creating a dining experience that is open, social, and brimming with rich flavours.

On a sun-dappled terrace, guests are invited to Seize the Sun with refreshing drinks, before savouring a three-course lunch featuring standout dishes such as the Heart Salad and Sea Bass 'Kelebek Style’, perfect for a leisurely afternoon by the shore.

As the weekend arrives, Nuska Beach transforms into a haven for family-style dining, offering dishes like the Grilled Baby Chicken with a za’atar Caesar, and a selection of sharing desserts, including the Warm Chocolate Mousse with Norohy vanilla ice-cream and streusel cake. The Rosé Weekend experience brings loved ones together over live music and an easy-going atmosphere, all while indulging in dishes that celebrate the hearty, generous flavours.



For those in search of a complete day of serenity, the Daycation package offers sunbed and cabana access, a three-course daily lunch, and refreshing beverages, including a complementary fresh coconut, inviting guests to unwind and enjoy a peaceful getaway by the water’s edge.
