In a hidden room, anticipation builds as the lights dim and mesmerising visuals ripple across the table, walls, and ceiling, while live performances draw you deeper into the moment. It’s a dining experience that awakens every sense, immersing you in a world far beyond the plate.
At the heart of this culinary journey is Chef Andrea Brugnetti, whose Italian roots and reverence for the sea inspire every dish he creates. Growing up close to the Mediterranean shores, his passion for vibrant, fresh ingredients bloomed early, guiding him through Michelin-starred kitchens and celebrated restaurants across Europe. Recognised by Caterer Middle East as “One to Watch” in the Middle East’s Best Chef Under 30 category, Chef Brugnetti’s accolades speak to his dedication and artistry. Grounded in a philosophy that celebrates all things “good” - both in life and in the kitchen - he views cooking as a way to convey emotion and preserve cultural heritage.
Now at the helm of Rockfish, nestled in the manicured grounds of Jumeirah Al Naseem, Chef Brugnetti’s creations draw on the ocean’s depth and pay homage to his upbringing. The restaurant’s setting, moments from the sea, creates a memorable backdrop for Chef Brugnetti’s Mediterranean-inspired creations, where guests can experience the flavours of the coast in an atmosphere of understated elegance. Here, a sleek design, highlighted by striking scallop shells lining the walls, offers a subtle nod to the ocean’s treasures. Outside, the terrace invites guests to enjoy shimmering views of the iconic Jumeirah Burj Al Arab in the distance.
As night falls, Rockfish transforms into a stage for its latest offering - an "Immersive Chef’s Table" experience. In collaboration with Immersive Show Dinner, this multi-sensory journey takes guests on a captivating exploration of Italian excellence, weaving together themes of the universe, under the sea, arts, cities, fashion, and cinema. Each of the five courses is a masterpiece, paired with captivating visuals and interactive performances that bring the essence of each dish to life.
The menu itself mirrors this immersive journey, offering a simple yet sublime tribute to the sea and Italian cuisine. It opens with Mare Nostrum Coral, where zucchini flowers, ricotta, and truffle evoke the Mediterranean’s turquoise-edged shores. Parmigiana di Melanzane follows, offering a refined twist on a traditional favourite, while Evergreen Secret brings together green risotto, orange, and asparagus in a delicate balance of fresh and bright flavours. The menu deepens with Tesoro della Terra, where slow-cooked cauliflower, dauphinoise olive, and capers deliver earthy, savoury notes. Finally, Sweet Melody, a reimagined Caprese salad, brings the experience to a close with heirloom tomatoes, strawberry marmalade, and burrata foam.
Chef Andrea Brugnetti’s Immersive Chef’s Table at Rockfish offers a rare opportunity to explore the spirit of the sea through the lens of Italian culinary excellence. Each course is designed to awaken the senses, blending storytelling, artistry, and the rich heritage of Mediterranean cuisine. “My goal is to evoke a sense of wonder and discovery. I want guests to leave feeling as though they’ve experienced the magic firsthand, not just tasted it.”
This extraordinary dining experience will be available for a limited time, from 15 October 2024, for six months. Guests can choose from two exclusive seatings each evening: the first beginning at 18:30, with dinner served at 19:00, and the second starting at 20:30, with dinner at 21:00.
