Shimmers - Jumeirah Mina Al Salam

Where the Aegean meets Arabia

Few restaurants in Dubai capture the charm of the Greek isles quite like Shimmers. Recognised by Gault&Millau Middle East 2025 with its white-topped tables set directly across the sand and the silhouette of Jumeirah Burj Al Arab rising nearby, the setting is pure postcard. Here, Head Chef Emanuele De Leo draws on his Sicilian roots to craft a menu rooted in the Mediterranean way of eating - grilled seafood, crisp salads, and olive oil in generous measure.

Dining at Shimmers is as much about the setting as the food: toes in the sand, the blue ocean stretched wide before you, palms and umbrellas casting dappled shade, and conversations flowing as the sun sinks low over the Gulf. There’s an easy kinship between Greek and Emirati culture, where meals are valued as flavourful, unhurried rituals, and best enjoyed at leisure.

Complementing this relaxed atmosphere is Shimmers Bar, where award-winning Bar Manager André Mano curates beverages that marry regional Mediterranean ingredients with modern mixology. Expect refreshing signatures designed for golden-hour sipping by the water’s edge.

Along the beachfront of Jumeirah Beach Hotel, Nuska Beach unfolds against an ever-changing seascape - paddleboarders gliding across the water, the horizon turning from soft gold to deep crimson as evening sets in. The space feels open and alive, made for gathering with family and friends by the shore.

At its helm is Head Chef Hasan Kayabasi, whose Turkish roots and over 15 years of experience have mastered the art of fire-cooking. His passion lies in blending Mediterranean and Levantine traditions with the primal character of flame. Signature dishes such as chargrilled clams are prepared directly over oak, cedarwood, and applewood, each bite infused with a distinct smoky depth. The result is a menu that feels authentic and elemental, inviting diners to connect over food that is deeply satisfying.

Our doors are open from day to night, inviting you to discover a dining experience that extends far beyond the traditional beach club. By day, settle into our uplifting sanctuary with uninterrupted sea views and a glistening pool. As the sun begins its descent, the energy rises with music, vibrant dishes, and a lively, social atmosphere.

Here, the essence of the sea and the land combine in dishes crafted by our visionary Head Chef Hernan Garcia. The menu celebrates the region’s culinary heritage with bold flavours and colourful presentation. Ceviches bright with citrus, tacos layered with spice and sweetness, delicate crudos, and flame-grilled meats all pay tribute to the diverse landscapes of Latin America - from the Andean highlands to the Caribbean coast. French Riviera Beach transports you straight to the southern shores of France, with only Jumeirah Burj Al Arab shimmering in the distance. The day begins with a beachside breakfast, where powdery sands, woven parasols and a gentle sea breeze create a beautiful start. As the day unfolds, a menu of elegant dishes and curated sharing plates invites conversation and connection, offering a taste of the celebrated French ritual of 'apéro'. In the kitchen, Chef Kim Joinié-Maurin draws on years spent working alongside Joël Robuchon to create menus that reflect the lightness and clarity of French Riviera cuisine - delicate seafood prepared with precision, seasonal vegetables brightened with Provençal herbs, and coastal classics given a contemporary touch.

Inspired by the vibrant traditions of coastal France, Chef Kim recommends his distinctive interpretation of bouillabaisse. This exquisite dish brings together delicate sea bass, tender langoustine, and sweet scallops, with briny clams and smooth orecchiette pasta, all submerged in a deeply flavourful bisque. It’s an imaginative and personal take on a celebrated classic.
