The menu brings Chef Thomas' memories through a collection of refined savoury and sweet creations, each one layered with flavour and quiet indulgence. The experience begins with an elegant savoury selection: sweet Dorset crab, silky Balik Royale salmon, a truffle-topped quail egg and richly marbled Wagyu Coppa paired with Comté. As the journey unfolds, the palate transitions from savoury depth into sweet pleasure. A velvety riz au lait offers comforting richness, followed by delicate gavottes, vibrant garden raspberries and smooth, golden caramel that lingers softly on the palate. Every element is thoughtfully reimagined to feel both nostalgic and decadently refined.

Finished à la minute in front of guests, each dish celebrates precision and theatre. While the inspirations are deeply personal, the expression is deliberately inspired, drawing on Middle Eastern influences, interwoven with subtle nods to local flavours.
