Dubai, 18 January 2015: Alta Badia in Jumeirah Emirates Towers and Segreto in Souk Madinat Jumeirah, two of the Jumeirah Group’s Italian restaurants, have introduced a truffle tasting menu available until mid-March.
The four or seven course menu showcases the black Norcia truffle, a rare black Umbrian truffle from Italy’s Norcia region that reaches the peak of its season in January. Often known as the ‘black diamond,’ these fresh winter truffles are highly prized by chefs and epicures throughout the world.
To ensure diners discover the flavour and aroma of the black Norcia truffle at exceptional value, guests can choose a four course option for AED 398, the full seven course menu for AED 475 or opt to order any of the truffle dishes à la carte.
Dishes include Carne Salada, cured beef carpaccio, watercress, lemon cream, chestnut and black Norcia truffle; Merluzzi all’Erbe, herb-crusted cod with beetroot, romanesco and black Norcia truffle and Filetto di Vitello, slow-cooked veal fillet, sautéed potatoes, beetroot, parmesan sauce and black Norcia truffle. Beverage pairings are available with each option.

About Claudio Melis, Jumeirah Group Executive Italian Chef:
Born in Sardinia, Claudio Melis learned to appreciate fresh and simple ingredients while enjoying his mother’s home-cooked meals. In Sardinia he attended the Hotellerie School in Sassari, following which he worked in France and Germany.He then moved to Northern Italy in the Dolomites, he became Executive Chef at Biohotel Hermitage and then Stube Hermitage Restaurant in Madonna di Campiglio. In 2004 he joined Hotel Ciasa Salares and Ristorante La Siriola in Alta Badia as Executive Chef until the end of 2010. During these years Chef Claudio travelled through Europe, from Spain to Denmark and Sweden and US to taste and learn about different cooking styles. He has also authored the book ‘La Cucina a Colori di Claudio Melis’, which was printed in 2008.
