Guiding this unique culinary journey is Executive Chef Alessio Nallino, whose passion for Italian gastronomy is reflected in each meticulously crafted dish. Hailing from Italy, Chef Alessio’s expertise spans Switzerland, Australia, and Vietnam, including a notable tenure at a Michelin-starred restaurant in Macau. He brings his cherished home recipes and memories into every dish, showcasing the rich flavours and textures of Italy while using only the finest local and seasonal ingredients. Each plate tells a story, celebrating the heritage of Italian culinary artistry infused with the vibrant essence of Bali.
Guests can embark on a remarkable culinary journey with the thoughtfully curated 7-course menu. The experience begins with the Burrata Tart, a layered mosaic of grilled eggplants, zucchini, and caramelised onions, complemented by a vibrant coulis of roasted tomatoes and bell peppers. Next, guests savour the Mahi-Mahi, a refreshing house-cured fillet paired with crisp notes of Plaga farm cucumber, pickled shallots, and sour cream.
The journey continues with Linguine al Ragu d’Anatra, featuring comforting homemade linguine enveloped in a rich white duck ragout, finished with duck jus that adds earthy yet refined depth. A seared Bonito loin follows, accompanied by fennel purée, bright notes of orange, and a salmoriglio of olives, capers, and pomegranate, capturing both Mediterranean flair and local freshness.
Next, indulge in the Agnello, a succulent grilled lamb chop paired with crispy polenta and braised bell peppers, rounded off by a mustard jus that adds a touch of warmth. To refresh the palate, a Lemon & Basil Sorbet is served, featuring citrus and a delicate berry veil. The experience concludes with the quintessential Italian Tiramisu, showcasing layers of savoiardi biscuit, coffee, and mascarpone foam, delicately accented by amaretto jelly—a fitting, indulgent finale to an unforgettable evening.

In true homage to its setting, Segaran’s design reflects elements of Bali’s Majapahit heritage. Handcrafted tiles from Yogyakarta echo the earth’s warmth, while Italian ceramic tableware, adorned with rich blue hues, mirrors the lush forests and rolling hills nearby. Paired with sweeping views of the ocean, this setting offers a seamless harmony between culinary heritage and Bali’s natural beauty.
Al Fresco Italian Night is held every Tuesday and Saturday from 5:30 p.m. to 11 p.m. Alongside fine dining options ranging from à la carte to five- and seven-course meals, guests can enjoy cocktails and an exceptional selection of Italian wines, thoughtfully curated to enhance the flavours of Chef Alessio’s authentic pastas and dishes.
