Vôi, a trendy new addition to Jumeirah Zabeel Saray’s culinary scene

A Vietnamese restaurant inspired by French cuisine

Monday,  17 October 2011: Jumeirah Zabeel Saray is delighted to introduce Vôi, a Vietnamese restaurant with an elegant French twist. The culinary jewel, inspired by the spirit of French colonial Southeast Asia from the 1920s, has a seating capacity of 80 guests and was launched on 22 September 2011.

Vôi’s signature dishes include Marinated Scottish Salmon Spring Rolls; Brittany Blue Lobster with Mango Artichoke Salad; Duck Breast, Foie Gras and Brussels Sprouts in a Tamarind Sauce; and Baked Banana served with Warm Chocolate Spring Roll and Honey Ice Cream.

Vôi’s Chef de Cuisine is Phuong Mai, a Vietnamese national from French-influenced Hanoi. Chef Mai is an internationally acclaimed, award-winning chef and joins Vôi with nearly twenty-five years of culinary experience. She has taken her expertise in French Vietnamese cuisine across the globe, working in Vietnam, Thailand, Egypt and China. Now making her Dubai debut, Chef Mai is incredibly excited to introduce an innovative, authentic Vietnamese menu with a French touch.

Joining forces with Chef Mai is Vôi’s restaurant manager, Quentin Fougeroux, a French national. Quentin brings in a wealth of expertise in Asian cuisine, having worked as a restaurant manager and sommelier in hotels in Thailand such as the Six Senses Hideaway Resort & Spa.

Nineteenth century colonial French design was the inspiration for Vôi’s interiors, with soaring ceilings, pure white walls, crystal chandeliers, shiny black lacquer furniture and floor-to-ceiling mirrors creating a sophisticated and elegant atmosphere with a sense of grandeur.

The launch of Vôi marks the last phase Jumeirah Zabeel Saray’s opening. The five-star luxury resort located on the West crescent of Palm Jumeirah is an homage to the Golden Age of the Ottoman Empire.
